Yes, Sora is Canon. However, he exists solely inside a filler arc, and was never mentioned outside of said arc. If he never existed, it would've hardly changed the story of Shippuden. So technically, he is Canon but not so that he played a crucial role in the show, or a role at all.

Yes it is canon, because Naruto ended up with Hinata and in Naruto Gaiden has two kids Boruto (not Burrito) and Himawari, but the wedding arc is a “fillerish” arc.
